What's for Dinner: Sausage and Kale Soup [Recipe Post]

Now that the weather is starting to get cool and crisp in the evening, soup is the perfect dinner choice at our house.
Spicy Sausage & Kale Soup [What's for Dinner at High-Heeled Love]


We get kale and onions a lot in our Brown Box Veggies, so I almost always have the ingredients on hand to make this soup, which Brown Box ladies shared earlier this year. You don't have to do the spicy sausage if spicy isn't your thing.

Spicy Sausage & Kale Soup [What's for Dinner at High-Heeled Love]

Spicy Sausage and Kale Soup

8 oz. spicy sausage, I crumble and pan sear it, but you can slice in 1/2-inch pieces
1 Tsp olive oil
1 onion, chopped
3 potatoes, peeled and quartered
4 cups chicken broth
4 cups water
12 oz. fresh kale, rinsed and coarsely chopped
salt and pepper to taste

1. In a large sauce pan, crumble and pan sear the sausage until browned. Remove from pan and pour off the grease.

2. Heat the olive oil and sauté the onion until soft. Add the sausage, potatoes, chicken broth and water. Bring to a simmer and cook until the potatoes begin to fall apart.

3. Add the kale and stir until it wilts into the soup. Simmer until the kale is cooked, about 10 minutes. Season with salt and pepper to taste. Serve hot.

If you'd like, you can mash the potatoes to make a thicker soup. Garnish with a dollop of sour cream and a sprinkle of paprika.

Beautiful photo! I know kale is all the rage right now, I'm just not sure how I feel about it yet. I need to find a way to ease into it.

I haven't completely embraced it; you won't catch me drinking green monsters anytime soon. But with a recipe like this, it's easy to integrate. I swap it out in other recipes that call for spinach, too.

Oh my gosh! Please tell me you're another Columbia blogger?! We LOVE Brown Box Veggies - we haven't been able to get them very often this fall because of football season and always being gone on the weekends but they seriously make me excited about waking up early on Saturday morning! This soup looks awesome too, by the way! Pinning it now!

Ah, love homemade Christmases. I think I'm going to stick to mostly homemade this year too, but it means I need to get my butt in gear now lol.


Awesome about skydiving, but also scary! Glad you got your date night last night... I came home from class and realized I was out of wine. Sad day indeed.

I don't think I'd ever go skydiving! In fact, I know I wouldn't- I'm too scared. Zip lining sounds fun but I still don't know if I'd be able to do it. Too scared of plummeting to my death...


I don't really decorate for Thanksgiving at all- maybe I should.



I really wanna do some homemade gifts this year to keep the cost of Christmas down, but I need some good ideas. I have plenty of things pinned but I don't even know where to start!


And yay for date night!!! I'm jealous :/

I finally made this last weekend and it was soooooo yummy!! Thanks for sharing this recipe! My boyfriend said it reminded him of the sausage soup he always gets at Olive Garden. I'll definitely be making this again.

I'm glad that y'all enjoyed it. It's a keeper, we make it a lot in the winter/fall since there's so much kale in the Brown Boxes.
