The Mister and I made this easy recipe from Real Simple for dinner the other night, and it was awesome!

Serves 4 
Hands-On Time: 25m 
Total Time: 25m

Ingredients

  • 1 pound ground beef
  • 2 scallions, chopped
  • 1 cup tortilla chips, crushed, plus more for serving
  • 1/4 cup chopped fresh cilantro, plus sprigs for serving
  • 1/2 teaspoon ground cumin
  • kosher salt and black pepper
  • 3 cups mild jarred salsa (about 1 1/2 jars, each 16 ounces)
  • 1 avocado, cut into pieces

Directions

  1. Heat broiler. In a bowl, combine the beef, scallions, tortilla chips, cilantro, cumin, ½ teaspoon salt, and ¼ teaspoon pepper. Shape the mixture into 1-inch balls (about 24) and place on a broilerproof baking sheet. Broil until beginning to brown, 5 to 6 minutes.
  2. Meanwhile, in a blender, puree the salsa with 1 cup water. Transfer to a large saucepan, add 2 cups water, and bring to a boil. Add the meatballs, reduce heat, and simmer until cooked through, 2 to 4 minutes.
  3. Serve the soup with the avocado, cilantro sprigs, and tortilla chips, if desired.

*My alterations: I left the cilantro out since I don't like it.

All eyes were on the radiant bride as her father escorted her down the aisle. They reached the altar and the waiting groom; the bride kissed her father and placed something in his hand. The guests in the front pews responded with ripples of laughter. Even the priest smiled broadly. As her father gave her away in marriage, the bride gave him back his credit card. 

****Note, that was not me; I've never held on to my father's credit card in my life.***

Now it goes without saying that I'm really excited about the wedding next weekend (duh). Aside from the fact that I'm marrying my best friend in the whole world, I'm super thrilled to see some of my West Coast family too. My brother and sister-in-law (check out  her blog: pearls & such)  live in Washington near my mom's side of the family.

With the entire country between us, we don't get to see them as often as we'd like, but we've been lucky enough that between holidays, graduations and weddings, we've been able to see them once year for the last 3 years. Next Wednesday evening, they'll be flying in!

Now, I think I've mentioned before how generous they are, but they've definitely put the icing on the cake for me this year because they're bringing me a surprise guest to my wedding. My godmother Aunt April will also be flying in on Wednesday.

Initially, Aunt April had not thought she'd be able to come, but my brother and his wife were able to fix this. It was supposed to be a surprise when they showed up for our joint bachelor/bachelorette party next week, but a little birdie accidentally forgot and told me about a month ago. I had been keeping it a secret, thinking that at least the Mister could be surprised--turns out he was in on the secret all along too. Now that it's out in the open that I know, I just have to impatiently wait until they get here.

I hope that everyone had a Happy Easter yesterday!


The Mister and I got up early to go to early service and have brunch at church. Then we headed home to work on wedding details because, you know, we're only 12 freaking days away!

We have officially finished up designing our ceremony programs. They have been emailed to the pastor for his final review and approval. If he gets back to us today, then we'll be assembling them tomorrow while we watch Lost. We used Mrs. Spaniel's programs for inspiration; check out hers at Tying the Knot.

We also spent a couple hours picking out music for the ceremony. When we began planning the ceremony, we wanted to have live music and sat down with the organist from our church. In the long run, we finally decided that was an area of our budget where we could save money. Between the two us, we have healthy iTunes libraries so it wasn't a big challenge to get music that we both liked. Some of our choices include Carlos Santana, Ben Harper and a piece from a Charlie Brown Christmas.

This weekend I also went shopping with my future MIL Tizzy* and her sister. We started the morning by doing a trail run on the spray tanning. I don't want to blind people with my white legs, and I simply don't have the time to layout in the sun. But I'm really please with the results, and for 10 minutes of my time, I'm pretty darn pleased with my glow.

Then we headed to the mall to pick out a pair of earrings that Tizzy is going to let me borrow on permanent loan for my "something borrowed." We also found dresses for both the ladies to wear to the wedding and one for me to wear out to dinner the night before.

We also made a stop at Michael's. It's amazing to me how often I head out to the craft stores these days. This weekend's trip should be one of the last. The Mister and I are deep in the throes of the DIY period of wedding preparation; however, I'm also at the point that if the supplies are not yet bought, then the project is probably getting cut.

Clearly, we're pretty busy these days. But we're getting married in 12 days!

*Tizzy is a nickname. Her grandchildren call her that because when they were young, they couldn't pronounce her first name.
